Cà Dây is a high-yield Robusta variety known for its naturally high sugar content (23–25 brix), producing sweet and complex flavor profiles. Its soft bean structure requires careful fermentation and processing to bring out its best qualities.

Using the natural process, the cherries are slow fermented and sun-dried for 25 days, allowing the beans to absorb maximum flavor from the fruit. This creates a coffee that is bold, aromatic, and perfectly balanced in sweetness, acidity, and body.
